vegan banana cake
ingredients:
* 8 oz brown sugar
* 8 oz vegan margarine
* 6 - 8 ripe bananas
* 10 oz self raising flour
* 1 tsp baking powder
* tsp cinnamon powder
* cup of rum/ soya milk
* (optional) handful of seeds/nuts
cream the sugar, margarine + bananas together in a bowl
gradually mix in the flour, baking powder + cinnamon
add rum or soya milk to give the mixture a dropping consistency
add seeds or nuts to taste
when well mixed, spoon into a cake tin or individual fairy cake tins
bake at 350 degrees F /180 degrees C /gas mark 4 for approx 20 - 30 mins...
when ready, cool briefly in the tin before transferring to a wire rack...
